Fallout is a content warning heavy canon. The major theme of the canon in general is war, so all of the horrors associated are going to come up. Seriously, if you can think of it, it's likely here in canon somewhere. In addition, the following topics are prevalent, especially in the New Vegas installment: body horror, fantasy racism, fantasy drug use, real racism in relation to Pre-War, abuse, slavery, prostitution, colonialism, and suicidal ideology / suicide. More than one of New Vegas' DLC also features unconsented invasive surgery.
